Over the past two years, Israeli Steakholder Foods (formerly MeaTech 3D) has provided us with bites of lab-grown steak and lab-grown wagyu beef. Currently, we are producing the world’s first whole farmed fish fillet, grouper to be exact.
The not-yet-market fillet was made through a partnership between Steakholder Foods and Umami Meats in Singapore. The latter supplied natural grouper cells, which Steakholder cultured and incorporated into his 3D-printable bioink.
The resulting fillet is ready to cook immediately after being bioprinted thanks to a “newly developed patent-pending technology” and boasts a natural flaky texture. In contrast, other artificial cultured meats require an incubation and aging period after printing.
And yes, the fillet is also said to taste like real grouper. that is, in a way. At a recent tasting event at the Steakholder facility, special guests had the opportunity to sample Singaporean and Israeli-style dishes featuring filets.
