Their rubberized surface allows the material to be easily incorporated into the mixture, reducing noise and vibration levels. This is KitchenAid’s latest line of hand mixers, which range from 5 to 9 speeds and also include a cordless option.
But what really sets this 6-speed hand mixer apart is the fact that it comes with a flex edge beater. The bottom third of the beater is covered with a rubber-like material to aid mixing while reducing noise and vibration from contact with the bowl.
There isn’t much to dislike about this hand mixer, but like other KitchenAid products, it’s expensive.

The 6-Speed Hand Mixer features the much-loved KitchenAid design, with a red or black glossy plastic body and the familiar metallic band found on the brand’s iconic stand mixers.
The real innovation here is the Flex Edge Beater. First introduced 10 years ago for KitchenAid stand mixers, the beater’s flex edge (flexible, rubber-like edge)’s main purpose is efficiency, so you can stop mixing and remove unmixed ingredients. No need to scrape the bowl with a spatula. Another advantage is that it avoids the rattling and vibration that normally occurs when metal touches the bottom of the bowl.

Conveniently, like the 16-wire whisk, the Flex Edge Beater is also dishwasher safe. Both can be stored in the appliance itself using storage clips (plastic discs with slots for tools that attach to the mixer’s accessory hole).
Unfortunately, no dough hooks are provided here, and the manual warns that the Flex Edge Beater is “not designed to mix or knead bread dough.” Making bread may not be the first thing that comes to mind when using a hand mixer, but it’s definitely doable, and I’ve had great results with a few hand mixers.
Like most hand mixers, each beater can only be attached to a specific matching hole on the mixer body, but the whisk will fit into either hole. Accessories are released. Below that is the speed control slider.

As its name suggests, this mixer has six different speeds, ranging from slow stirring action to very fast beats. More budget-friendly hand mixers tend to stay on the high to very high end, even though they seemingly offer different speeds.
Here, speed 1 means stirring and initial mixing, speed 2 is good for heavy mixes such as cookie dough. Settings 2 and 3 are both recommended for mixing and mashing cream cheese, while settings 4 and 5 are best for cake batter and blending butter and sugar. Finally, speed 6 is for whipping egg whites and cream.
Setting and changing the speed takes a bit of getting used to, as it’s easy to overshoot the mark at first. The best guide is to push the slider so that the top of the slider is level with the relevant speed marker line.

I started testing with cookie dough, which is a tricky mix. After about 6 minutes, a uniform, thick mixture was reached.

Keeping the same speed, I added the eggs, peanut butter, and flour, mixing for 1-2 minutes after each new addition, and finally added the chocolate chips.
It took some work to move the mixer around, but the appliance itself is very lightweight, making the task of working with large, heavy mixes much easier.

Using a flex edge beater during this process was convenient in that I didn’t have to manually scrape the bowl for unmixed ingredients. The rattling noise and the normal vibrations were less likely to reach my arm.
Next, I attached a whisk to the mixer and increased speed to 6 to whisk 4 room temperature egg whites. These were foamy for her after 1 minute and hard for him after 2 minutes and 30 seconds.

To whip 250ml of double cream with a little powdered sugar, I started slowly on setting 1-2 and increased speed to 4-5 as the mixture thickened. It took 20 minutes.

If you hate the noise of a hand mixer, this one is a little quieter thanks to the rubberized Flex Edge Beater.
If you want to make a yeast-based dough, you should look out for mixers with dough hooks.
