
Wine drinkers have many options when choosing their preferred varietal

Differences in salivary proteins may explain why different people have different tastes in wine. The researchers linked the concentration of the two types of protein to how frequent wine drinkers find notes in wine, such as fruity or floral, and their preference for alcoholic beverages.
